NINE TOP STIR-FRY TIPS

Stir-frying is the perfect way to whip up quick, healthy, and flavour-packed meals. With these nine tips, you can create vibrant, restaurant-quality dishes at home.

Before you start cooking your stir-fry, assemble all your prepared ingredients so that everything is at hand and ready for you to cook rapidly.

Use a sizeable heavy-based wok or deep non-stick frying pan to cook your stir-fries. And have a wok stirrer (Asian wok chan) on hand to easily toss the ingredients.

Use vegetable or ground nut oils like peanut oil that get to high temperatures without burning. Preheat the wok or pan over high heat, then swirl the oil around the wok until it's coated and sizzling.

Cook off your choice of the protein base, like chopped beef, chicken, pork, lamb, prawns, tofu or beaten egg, in small batches to keep it tender. Transfer each batch to a plate and return to the wok toward the end of cooking. If you like, marinate the meat or tofu before cooking.

Add your choice of flavourings like garlic, ginger, chilli and curry paste and stir fry for 30 seconds.

Then add the thickest vegetables like cauliflower, broccoli and capsicum. Stir-fry for a minute or two until seared and vibrant.

Add the onions, carrot and celery mix and stir-fry until tender.

Add your choice of stir-fry sauce liquid like stock or coconut milk) and toss until hot.

Then, return the protein base to the wok or pan and cook vegetables like snow peas. Toss until hot. Note, at this point, you can toss through fresh herbs, prepared noodles, and any other additional ingredients you choose.
