WATERMELON, FETA & MINT SALAD
This vibrant salad is summer in a bowl — juicy, sweet watermelon meets creamy feta and fresh mint for a refreshing combination that’s quick to prepare and always a crowd favourite. Perfect for barbecues, picnics or as a light side to grilled meats and seafood.
4 cups seedless watermelon, cut into bite-sized cubes (approximately 1kg)
150g feta cheese, crumbled or cubed
½ cup fresh mint leaves, roughly torn
1 tablespoon extra-virgin olive oil
1 tbs fresh lemon juice (optional for added tang)
Pinch of sea salt flakes and cracked black pepper, to taste
STEP 1: In a large serving bowl, combine the watermelon cubes, feta and mint leaves.
STEP 2: Drizzle with olive oil and lemon juice and gently toss to combine, being careful not to break up the feta too much.
STEP 3: Finish with a sprinkle of sea salt and cracked black pepper to taste. Serve immediately while chilled.
