TOP TIPS FOR ROASTING WINTER VEGETABLES

A hearty dish of roasted winter vegetables served with hummus and roasted chicken, beef or lamb makes a fabulous winter meal.

  • Pre-heat your oven to 200°C/180°C fan-forced.
  • Use a combination of pumpkin (skin on), potatoes, carrots, parsnips, red onions and celeriac.
  • Cut vegetables into chunky even sized pieces.
  • Ensure vegetables are dry before cooking.
  • Toss vegetable pieces with olive oil, sea salt, ground black pepper and some fresh thyme sprigs.
  • Arrange vegetables in a single layer in a large baking pan.
  • Roast, turning once, for 1 hour until tender. For golden crispness, increase oven temperature to 220°C fan-forced in the last 5 minutes of cooking
