Vegetable spaghetti is a member of the pumpkin family. Their raw pale-yellow flesh is firm, but on cooking magically the flesh falls away in ribbon-like strands that like similar to spaghetti.

Spaghetti squash can be cooked in a variety of ways, including baking, boiling, steaming, or microwaving.

Place the vegetable spaghetti (seeds intact) face down on a baking tray lined with baking paper and moderate oven cook at 180oC for 40-45 minutes (or until the skin of the vegetable spaghetti softens). Allow to cool slightly, then remove the seeds and rake the flesh lengthways with a fork.
