Picking the Perfect Eggplant
If you feel the eggplant by pressing your finger on its skin, it shouldn’t be hollowed from the inside. If it leaves a light imprint then the eggplant is ripe. If it is too soft , it means it is too old and would probably be bitter. This is the best way to choose the eggplant. Shape and size doesn’t matter too much.
Storing an Eggplant
The best way to store an eggplant is in your refrigerator. If you leave it outside the fridge for the whole day it will become dry and start wrinkling. Wrap it in a plastic bag when you put it in the fridge to give it a bit of extra longevity.
